A simple scone recipe for any day of the week.

Simple ingredients combined together to make a lovely fluffy scone to eat by itself or with your favourite sides. This recipe will make approximately 12 scones but this of course depends on the size you want your scones. My scones were about 3 – 4 centimetres wide.


3 cups of self-raising flour

110 grams of unsalted butter at room temperature and cubed

1 – 1 1/2 cups of milk depending consistency

1/2 cup of caster sugar

Pinch of salt

3 egg yolks beaten

Plain flour to dust


  1. Preheat your oven to 190 degrees Celsius fan forced.
  2. Sift the flour and mix the sugar together and add a pinch of salt
  3. Using the tips of your fingers mix the butter and dry mixture together and continue to do this until it resembles bread crumbs.IMG_4559
  4. Create a well in the middle and add the milk and beaten egg yolks to the centre and fold together until the mixture forms a dough. Make sure the mixture sticks together however is not dry. Add extra milk slowly if necessary.
  5. Transfer this to a lightly floured surface and using the palms of your hands to kneed the dough until it is smooth and consistent. Remember don’t over work your dough!
  6. At this point if you wanted to add any toppings, for example choc chips or blueberries kneed it softly into the dough.
  7. Depending on how you want your scones to look you can either roll out your dough to approximately 2 cm thick and using a cookie cutter to cut into circles. if you wanted a rougher looking scone like the ones in my photo all you do is spoon and tidy the edges and pat the top.I find when tidying the dough I tend to use a damp paper towel as it doesn’t stick when smoothing the edges and top.
  8. These don’t expand much in the oven so just a little space between each one on a tray is enough. Make sure you spray or place baking paper on the tray to prevent the scones from sticking to the bottom.
  9. Bake for approximately 10 – 12 minutes, or until the scones are slightly brown on top. Remove from oven and transfer to cooling rack.
