An extremely delicious but simple dish to make in the kitchen.
- One whole barramundi (700g) cleaned
- Light soy sauce
- Fish sauce
- 100 ml chicken broth
- 2 medium cuts of ginger thinly sliced
- 8 cloves garlic roughly chopped
- 1/2 brown onion roughly chopped
- Spring onion
Start by packing the inside of the fish with garlic, onion and 1/4 of the ginger. This will give the fish meat a sweet taste when steamed. Add a pinch of salt and pepper.
Rub salt and pepper to the outside of the fish.
Place the barramundi fish on to a plate which you can steam with. Surround the fish with a few pieces of ginger and a few spring onion pieces.
Place over hot water and steam for approximately 20 minutes.
To make the sauce bring the chicken broth to the boil and add in 1 tablespoon of light soy sauce. Add in 1 – 2 teaspoons of fish sauce.
Add the ginger to the sauce. Put aside some of the ginger to garnish.
Remember to continue to taste the sauce making sure it is all balanced. I added some sugar and pepper to balance. I also added hot water to counteract the saltiness of thr sauce.
Finally add the spring onion and slightly cook.
To serve take the fish from the steamer and pour out any excess water from the plate. Pour the hot sauce over the fish. Add spring onion and ginger to garnish.
Serve with some rice and enjoy!
