A Sweet Slice of Hedgehog

A very easy to make hedgehog snack, it is no bake and has very simple method. I must say this is a sweet dessert so let’s keep this as a sometimes treat for the family and friends. This usually takes me about 40 minutes to complete.

Ingredients

  • 1 Packet of Arnott’s Scotch Finger biscuitsDSC00933
  • 3/4 cup of desiccated coconut
  • 3/4 cup of almonds ( you can add walnuts if you prefer)
  • 3 tbsp Cocoa Powder
  • 1 cup Dark Chocolate
  • 1/2 cup Milk Chocolate
  • 120g Butter
  • 1 can of sweetened Condensed Milk

Put aside

  • 3/4 cup Milk Chocolate
  • 1/2 cup Dark Chocolate

In a large bowl you will be combining the dry ingredients together. Firstly crush the almonds and scotch fingers into small pieces. Add the desiccated coconut and sift in the cocoa powder. Place bowl aside.

Now we will move on to the wet mixture.

In a saucepan on low heat start melting the butter, when the butter is half melted add in both the milk and dark chocolate. Once the chocolate has all melted and has combined with the butter, pour in the can of sweetened condensed milk. Continue stirring until all has combined and is smooth in texture.

You will need to add the two mixtures together now. Slowly pour the wet mixture into the dry mixture continuing to stir until both have combined and is intact. The texture should be nice and gooey.

DSC00921Transfer mixture into a square or rectangular pan. I used a bread rectangular pan because I wanted thick bite size pieces. Smooth the texture over and place in the fridge to cool. Allow 30 minutes in the fridge.

Before taking the hedgehog out, place the rest of the milk and dark chocolate in a microwavable bowl with 2 teaspoons of olive oil and microwave 10 seconds at a time until the chocolate is melted and glossy. Remember to stir in between the 10 second intervals.

Remove the hedgehog from the fridge and pour the chocolate over the top. Tap the pan softly on a surface to smooth out the chocolate.

Allow the chocolate to set, remove from pan and cut to desired bite size.
